Vegan Apple Crumble Cake: Our New Recipe

Apple Crumble is a family favourite for pudding for us, spanning three generations. When I managed to fix up a recipe for Apple Crumble Cake last month, I knew it would be a corker!

Vegan Apple Crumble Cake

Ingredients 
  • 100g vegan margarine
  • 150g golden caster sugar
  • 200g self raising flour
  • 1 tsp baking powder
  • 200ml plant milk
  • Few drops vanilla essence (optional if making normal sponge)
Crumble Mix
  • 100g plain flour
  • 50g dairy-free margarine
  • 50g brown sugar

Stewed Apples
  • 3-4 apples (peeled, cored, chopped small)
  • 3 tbsp sugar
  • 100-200ml water

Method

•         First stew the apples. Do this by mixing the apple ingredients into a saucepan and leave to simmer until they're soft. This will take a while to cook and cool.
•         Now make the crumble by rubbing the ingredients together to form a soft crumbly mix. Put to one side. 
•         Put all cake ingredients in a bowl and mix until smooth.
•         Put the mixture into a lined, greased loaf tin. 
•         Bake at 180°C for approximately 30 minutes. Half way through, sprinkle the crumble mix on the top - a generous amount! 
•         The cake is ready when it's golden on top, and a skewer comes out clean
•         When the cake is cool (no sooner or it'll fall apart!), slice it in half horizontally through the middle and fill with the stewed apples. Carefully put the 'lid' of the cake back on, taking care not to lose any crumble.

Carnival Time!

On Saturday, the 280 Bakes team tried something new - we took part in a parade!

Lawrence Weston Carnival was held on Saturday 18th June this year, and we were pleased to be invited to join in the fun. Two of our team dressed up and boogied down Long Cross (main road in Lawrence Weston) to the beat of drums, with wheelchairs decorated like sunflowers, a flying pig, and so much more!

Here are some of the photos from the day - thankfully the rain held off! We're already looking forward to next year!

We had a wide range of cakes on sale - and I'm pleased to say we sold out! (bar two flapjack, which we had for dinner!).

Go Nuts: Kids Let Loose

One of my customers called me last week and asked for a very special order: One Victoria Sponge cake, butter iced all over - just plain, nothing more. This was for her boyfriend's birthday and his kids (aged 3 and 6) were going to spend the morning decorating it for him, so they needed a plain canvas. I was happy to help, and here's the results!

For an extra special surprise, I put in a layer of fondant icing with the jam, and I filled the centre of the cake with jelly babies. Apparently, the delighted squeals from the kids (and possibly dad) were audible from outside the house!

Our First Wedding Fair!

Yesterday we were lucky enough to be representing cakes at a Bristol wedding fair - not a bad gig for our first wedding event! We joined around 30 other wedding suppliers, from amazing magician Grant Maidment to the lovely guys from wedding band 'The Hot Hats' in the Mercure Hotel, Bristol, and welcomed in newly engaged couples.
