This week's been a scorcher - a perfect time to launch our new, improved summer bakes menu! Inspired by the tropical fruit grown in the Caribbean, we've developed two new delicious cakes, using mango and pineapple. Welcome to: Love From Jamaica! Both cakes are available for gluten free diets, the pineapple cake is vegan with lemon zest for an extra tropical hit. The mango cake is made with mango yoghurt and has a double layer of icing (fondant and buttercream) in the middle. Divine - just perfect for a barbecue dessert! ![]() We’re not telling fibs when we say over 65% of our customer base are vegans. But how, as one recent customer asked, how do you make cakes vegan, with no butter, milk, or eggs? Surely, you’re just left with flour and sugar?! Well, you know what we’re going to say to that: OF COURSE NOT! So, how do we get our cakes to stick together, rise, look great and taste amazing without any dairy or eggs? The exact recipes we have developed, are, of course, company secrets (apart from this one), but we can share some info with you in our new blog post! VEGAN CAKES: The 280 Way! More vegan cake facts you may like to know… Vegan cakes are more eco-friendly than our standard cakes: free from animal products, and as a result, with a smaller impact on the environment. They take a little longer to bake, and often look a little darker on top than a standard recipe. We often wrap vegan cakes in foil for the last 5-10 minutes of baking, to ensure the golden brown stays that delicious colour, and not turn burned. The absence of eggs means vegan cakes are lower in cholesterol, which promotes healthy living, but they’re often a little higher in sugar – not all recipes, but some. We hope this has intrigued you, and got you wanting to try a vegan cake this week! The Team @ 280 Bakes Yes, folks, it's here - National Peanut Butter Cookie Day 2017! We've been baking (of course!) for the occasion and Louise said she'd share her 'simplest ever' recipe. It only has four ingredients! Ingredients 1 cup peanut butter 1 cup granulated sugar 1 large egg 1 teaspoon vanilla essence Method Simple as anything: Mix all the above ingredients together in a large bowl. It helps if you measure the sugar first and then use the same cup for the PB, so it doesn't all stick in the inside of the cup with the spread. Roll the batter into smallish balls (around one inch across) and place on a baking tray lined with baking paper. Leave a minimum of an inch between each ball and push down gently with a fork to create a grid pattern on the top. Pretty! And for good measure, I poked some chocolate chips into the tops of the cookies before baking. Bake the cookies at 180 degrees until they turn golden brown (15 - 20 mins, depending on the size of your cookies). Cool a little so the cookies are a little more solid, but enjoy warm. Yum!
