This week's been a scorcher - a perfect time to launch our new, improved summer bakes menu!

​Inspired by the tropical fruit grown in the Caribbean, we've developed two new delicious cakes, using mango and pineapple.

​Both cakes are available for gluten free diets, the pineapple cake is ​vegan with lemon zest for an extra tropical hit. The mango cake is made with mango yoghurt and has a double layer of icing (fondant and buttercream) in the middle. Divine - just perfect for a barbecue dessert!

How To Bake A Vegan Cake

We’re not telling fibs when we say over 65% of our customer base are vegans. But how, as one recent customer asked, how do you make cakes vegan, with no butter, milk, or eggs? Surely, you’re just left with flour and sugar?!

Well, you know what we’re going to say to that: OF COURSE NOT!
 
So, how do we get our cakes to stick together, rise, look great and taste amazing without any dairy or eggs? The exact recipes we have developed, are, of course, company secrets (apart from this one), but we can share some info with you in our new blog post!


​VEGAN CAKES: The 280 Way!
 
Some surprising ingredients may feature in your favourite 280 Bake recipe. For example, could you have guessed that…?


  • Our ‘go-to’ chocolate cake recipe replaces eggs with pureed avocado. The fruit doesn’t have an overwhelming flavour and has good texture to bring a structural support for the cake.
  • While we’re on chocolate, all our vegan chocolate cakes are baked and decorated using dark chocolate. Marginally better for you too, the word is!
  • When we brew the coffee for our delicious coffee cakes, no milk is put in the mixing mug. Black (and therefore, vegan) coffee all the way!
  • Bananas are a great egg replacer – perhaps that’s partly why vegan banana cakes (always Fairtrade from 280 Bakes!) are so popular!
  • Where a form of butter has proved essential to a bake, as with our Prosecco cupcakes, our handmade ‘buttercream’ and our vegan and gluten free brownies, we have discovered some fantastic dairy free butter alternatives in the aisles of the larger supermarkets for the vegan cake versions.
  • Sometimes a 280 Bakes cake recipe may call for milk, and happily for our vegan customers, there’s a plethora of plant milk varieties on the market we can choose from as your baker. A good example of this is our vegan Christmas cake, which contains almond milk. We use almond milk mostly, but sometimes the recipe calls for soya or coconut milk.​

More vegan cake facts you may like to know…
 
Vegan cakes are more eco-friendly than our standard cakes: free from animal products, and as a result, with a smaller impact on the environment.
 
They take a little longer to bake, and often look a little darker on top than a standard recipe. We often wrap vegan cakes in foil for the last 5-10 minutes of baking, to ensure the golden brown stays that delicious colour, and not turn burned.
 
The absence of eggs means vegan cakes are lower in cholesterol, which promotes healthy living, but they’re often a little higher in sugar – not all recipes, but some. If you’re concerned about your sugar intake, why not take a look at our 280 Skinny cake range?

It's Peanut Butter Cookie Day!

Yes, folks, it's here - National Peanut Butter Cookie Day 2017!

​We've been baking (of course!) for the occasion and Louise said she'd share her 'simplest ever' recipe. It only has four ingredients!

​Ingredients
​1 cup peanut butter
1 cup granulated sugar
​1 large egg
​1 teaspoon vanilla essence

​Method
Simple as anything: Mix all the above ingredients together in a large bowl. It helps if you measure the sugar first and then use the same cup for the PB, so it doesn't all stick in the inside of the cup with the spread.

​Roll the batter into smallish balls (around one inch across) and place on a baking tray lined with baking paper. Leave a minimum of an inch  between each ball and push down gently with a fork to create a grid pattern on the top. Pretty!

And for good measure, I poked some chocolate chips into the tops of the cookies before baking.

​Bake the cookies at 180 degrees until they turn golden brown (15 - 20 mins, depending on the size of your cookies).

​Cool a little so the cookies are a little more solid, but enjoy warm. Yum!

Our First Birthday!

Today is our first birthday, here at 280 Bakes. We're so proud and pleased to have survived and thrived through to our first landmark birthday. Hooray for small business!

​Over the last year we've gone from being porch sale cake stall to a bona fide company. So what have we achieved?
​
  • ​We've developed a specialism for vegan cakes,
  • We now employ five Bristol based bakers: Louise, Destiny, Debbie, Katy who bake and deliver, and Lloyda, who does the occasional event for us.
  • Our unique service of CakeOD (cake delivered on demand) is a valued service across Bristol.
  • We've been published in Boundless Magazine (a recipe), a review on Wriggle, an article on '5 places to enjoy 280 Bakes cake in Bristol' in Harboured Magazine, mentioned in the Wiltshire Gazette & Herald, South Bristol Voice, BS9 and Ambition Lawrence Weston local magazines (a feature and a review), and numerous foodie blogs.
  • The Bristol Food Tour regularly orders our vegan peanut butter and chocolate cake for their vegan foodie tours.
  • We have developed a huge network of 'foodie colleagues' who we enjoy supporting and love when they join in our cakey fun (e.g. Moor Beer, Fab Fudge, among others)
  • In February, we delivered our 280th (a significant number in our business!) cake.
  • We've raised money for Macmillan Cancer Support through coffee morning donations and other local fundraising events, and our bakers volunteer their skills for Free Cakes For Kids - Bristol.
  • The business has been in profit from day one - a real start-up achievement!
  • We've attended over 20 events in the last 12 months, from vegan food fairs to local carnivals and fetes.

​We held a coffee morning to celebrate all this with our 'friends of 280 Bakes' and our customers today, and here are the best photos from the event.
​
