We have exciting news - we've just employed two new bakers. This means the team at 280 Bakes is the biggest it's ever been! Today we welcome two new members to our team of bakers. Meet Lorna and Kayleigh, two keen home bakers from south Bristol, who are ready and raring to bake for you! Kayleigh says she enjoys making cupcakes the most, where as Lorna is a dab hand at chocolate cake. As the baker mould is seeming to be, they're both mums, baking for us around other work and family commitments. Baking Tres Leches cake for her Costa Rican husband is fast becoming an annual tradition for our Louise. Check out how the birthday cake turned out for 2017! Tres Leches is everything Costa Rican. It's sugary, full of milk and fruit, and, like everything in that country, ENORMOUS! This year's birthday cake was a step up from last years, I feel - what do you think? The recipe is here, but here are the photo stages of the most impressive Tres Leches cake ever. The birthday boy is ice cream crazy, so I went with that theme for this year. Tres Leches starts with baking two enormous vanilla sponges, doused in evaporated milk, condensed milk, and semi-skimmed. The two sponges have 10 eggs between them on the ingredients list, so it's about as far from vegan as you can get! ![]() Stage two - decorate and fill the beast with cream and fruit. Tropical fruit works really well, but anything colourful works. I love how it looks like someone's dropped a couple of ice cream cones on the top of this one, and the chocolate really finishes it off. Pretty proud of this one! Even better, it will last for days (kept in the fridge) - there must be 30 slices there. No doubt we'll have visitors this weekend...! Which ones are your favourites? Until next time, The Team @ 280 Bakes This weekend saw the return of the Goram Fair at Blaise Castle Estate, Bristol - and we were there with our home baked cakes! The wet weather didn't put off Bristol families as they splashed through the fairground and stalls at the community event at Blaise Castle on Saturday - most, it seemed, stopping at our cake stall! Check out some of the delicious bakes we had for sale: gluten free, vegan, standard recipe cakes, Fairtrade cake, boozy bakes... We had it all. ![]() We'd like to give a special mention to this guy, a father of a vegan who was particularly sceptical about the concept of vegan cakes. No eggs, no butter, no milk... How could that taste good? So, we gave him a cake to try, and he devoured the cupcake, almost whole. In his (tongue in cheek) words, "Wow, that does not taste like broccoli AT ALL!" Glad to be of service - hope to see you again, sir! The Team @ 280 Bakes Dairy free, citrus intolerances, no soya, nut allergies... All of these can be challenges when ordering a cake for someone with intolerances or allergies. Never fear, we can help! If you know anything about us at 280 Bakes, it's probably that we do one of two things: CakeOD (same day cake deliveries in Bristol), and that we specialise in vegan cakes. Our dietary requirements skills go far beyond this food preference group, however. We regularly bake for dairy free customers (not quite the same as vegan), gluten free cakes, and easily accommodate allergies, such as: soya, almond milk, nuts, citrus... and general dislikes, such as raisins in carrot cake! You'd be surprised how many 'off the shelf' carrot cakes have raisins in them... The cakes below are dairy free cupcakes with no nut milk, chocolate raspberry cake (vegan), and gluten free red velvet, all recent orders in Bristol. Over 70% of our customers come to use for their cakes with specific ingredients missing. What's more, some of our team itself have food intolerances - red onion (which, admittedly doesn't go in cake often!!), and previously a problem with eating bread for one of our bakers. We know it can be tough to avoid certain things. We bake and deliver fantastic, tasty cakes for those who thought it wasn't possible. At 280 Bakes, we know cake can be a special treat in the afternoon, a part of the celebration for so many family events, and a reason to share.
